How Recipe Scaling Works
Recipe scaling multiplies each ingredient by a scale factor:
Scale Factor = Desired Servings ÷ Original Servings
For example, scaling a recipe from 4 servings to 6 gives a factor of 1.5×. Every ingredient amount is multiplied by 1.5: 2 cups of flour becomes 3 cups, ½ teaspoon of salt becomes ¾ teaspoon.

Tips for Successful Scaling
- Linear scaling works for most cooking: Soups, stews, sauces, and casseroles scale linearly with excellent results.
- Baking requires care: Leavening agents (baking powder, baking soda, yeast) may need non-linear adjustment for large scale changes (4× or more).
- Seasonings to taste: When scaling up significantly, start with 75% of the scaled spice amount and adjust to taste.
- Pan size matters: Doubling a recipe may require a larger pan or baking in batches to ensure proper cooking.
- Cooking time: Scaled recipes may require different cooking times, especially for baked goods. Monitor doneness rather than relying solely on time.
